Beef fajitas with Boréale Blonde

PRÉPARATION 20 minutes

CUISSON 25 minutes + 1 hour for marinade



250 ml Boréale Blonde
125 ml olive oil
4 garlic cloves, minced
2 limes, juiced
1 tsp. BoCoq Gourmet coriander, ground
½ tsp. BoCoq Gourmet Cayenne pepper
1 kg top beef sirloin
4 onions, sliced
2 green peppers, cored and sliced
2 Jalapeño peppers, cored, roasted and cut into strips
Corn tortillas in sufficient quantitie

  1. Mix Boréale Blonde ale, olive oil, garlic, lime juice, coriander and Cayenne pepper in a marinade bowl. Cut beef into ¼ in. strips and add them to marinade. Blend well and refrigerate for at least 1 hour.

  2. In a non-stick pan, heat up a small amount of oil, then add the onions and peppers. Cook for about 5 minutes, or until vegetables become less crunchy. Remove from heat and set aside.

  3. In the same pan, add beef strips and cook on all sides for about 3 minutes. Add vegetables previously set aside and cook for 15 minutes. Add jalapenos toward the end of the cooking process. Remove from heat and serve with heated tortillas.

Notes: In order to save time, you could prepare your marinade the day before, letting your meat marinate overnight until cooking time. For a spicier kick, do not core your jalapeno peppers.
